I love this time of year! Football has started back, temperatures are dropping, and it's the perfect time to enjoy a flavorful meal with family and friends on your patio. This week's meal would be an excellent entree to serve for Thursday night dinner, or this casserole will keep for the weekend to savor while you're watching all of those SEC football games! The CHICKEN & WILD RICE CASSEROLE is a delicious dish made with slow-roasted chicken with sautéed onion and celery in a creamy mushroom sauce with wild rice, water chestnuts, and cheese. It is comfort food at its finest! Serve with a mixed greens salad tossed in a lemon dijon vinaigrette dressing and dinner is done! I've included the lemon dijon vinaigrette dressing below.
Lemon Dijon Vinaigrette
2/3 cup extra virgin olive oil
4 T white wine vinegar
2 T freshly squeezed lemon juice
2 T dijon mustard
2 cloves of minced garlic
1 tsp kosher salt
1/2 tsp black pepper
