For those of you who have children that might be starting back to school this week, this Chicken Pot Pie would be the perfect solution to the never-ending question, "What's for dinner, mom?".
This pot pie is made with a creamy buttery blonde roux filling with sautéed onions combined with slow-roasted chicken, tender peas, carrots, corn, green beans, sliced potatoes, fresh herbs and blanketed with a golden brown, flaky crust just begging for that first crunchy pierce from your spoon! This is one of my family’s favorite meals and I hope it becomes one of yours as well!
